Rosemary Collins

Ingredients

  • 30ml gin
  • 20ml freshly squeezed lemon juice
  • 10ml Rosemary syrup*
  • Soda water

Method

*To make the rosemary syrup, gently heat one cup of sugar with one cup of water. Once the sugar has dissolved, remove from the heat, add two large sprigs of fresh rosemary to the pan and cover. Leave for 2 hours. Remove rosemary and strain rosemary syrup into an airtight bottle.

Add all of the ingredients to an ice-filled cocktail shaker and shake until cold. Strain into a tall, chilled glass and add ice. Top up with soda water and garnish with a slice of lemon and a rosemary sprig.
