Wattleseed is a key ingredient in the Adelaide Hills Desert Gin. A native spice that flourishes in the Australian desert, it has a nutty, coffee-like flavour once roasted. Three species of wattleseed are roasted in house and macerated in the base gin to give it a golden colour and those rich complex flavours of roasted coffee, cocoa and toffee. The warmth of those spices is complemented by the spiciness of native pepperberry and balanced by some citrus aromatics from the use of blood lime and Riverland oranges.
