You like your gins brimming with juniper and savoury notes because this oyster gin from North of Eden is definitely that.
Made in the NSW Sapphire Coast on a 12 acre farm, the first Australian oyster shell gin is an absolute cracker. Owner distillers Gavin and Karen make this with locally sourced oyster shells and saltbush alongside juniper and coriander. Not only is it's fresh on the nose, with lots of juniper but it's got an almost creamy mouthfeel.
Additionally, the gin gets a citrus lift from lemons, limes and cumquats the pair grow on the farm. Hawthorn leaf, rose and lemon mytrle add delicate herbaceous floral layers, while ginger delivers a slight spicy tingle on the palate. All in all, this is a beautifully balanced gin where no one botanical dominates.
Pair this with actual oysters to bring out a sweetness to the gin when sipping it neat. However, If you love martinis this North of Eden Oyster Shell Gin is THE gin for you!

A dry Martini however, this is a delicate gin so go *really* easy on the vermouth or you'll find it overpowering the gin. Or try the oyster shell gin with a light tonic for a refreshing long drink.
