The flavours of the gin are achieved through distillation alone, without any flavourings added post distillation. The base gin is first steeped in locally produced fresh Castlemaine honey. Toasted coconut is then added and everything distilled with a cacophany of botanicals that don't just include the traditional mix of juniper and coriander seed, but also dried fig and nutmeg. The result is an interpretation of contemporary gin that is delightful to sip on its own but also works well in cocktails. The honey lends a subtle sweetness to the liquid and the nutty toastiness of the coconut is present on the nose. Warm spice and fruity fig comes through on the palate with the zing of juniper and the caramel like characteristic of toasted coconut finishing things off. It's an exercise in taking what could be strong flavours and turning it into a delicately balanced gin that is one of the best out there.
