Newly released in 2020, the Applewood Coral Gin has taken 5 years to perfect. Riberry and strawberry gum leaf feature as two of three ingredients and it is these that give the gin its slight pink hue. There's a sharp herbaceous tang and subtle fruity sweetness from the strawberry gum, which is punctuated by a little spice from the riberry. The use of karkalla (also known as pig face or sea banana) adds a salinity that cuts through the fruit and floral notes and provides a lingering savoury almost buttery finish.
