Despite the colour, this is not a syrupy sweet gin. Fresh raspberries are steeped in the base gin, which results in the light pink hue and a deliciously dry gin that has a hint of tart sweetness. Pinkster only makes the gin during the summer cropping season in the UK. Their insistence on only using fresh fruit also means you don't get the plasticky artifical aftertaste that comes with some.
