You like wine and gin and looking for a way to combine the two. The Three Cuts Pinot Rested Gin is a great example of barrel aging (or should we say, barrel resting) done well. And judging by the awards it's won (Gold at the IWSC 2022 and San Francisco World Spirits Competition 2020), it would seem this is a consensus shared.

Marrying the world of gin and wine isn't so much of a surprise when you consider co-founder Justin Turner's background. Hailing from a family of winemakers who also produced other spirits, it seems natural Turner Stillhouse would eventually find a way to incorporate both.  Their baseline gin is award winning in and of itself. Containing twelve botanicals, and three cuts of rose (hence the name!), it is a subtly balanced floral gin. The rose flavours come through in a fresh way rather than cloying potpourri.

Undercutting that floral tone is now subtle tannic spice of rich pinot together with sweet vanilla tones. Those additional flavours come courtesy of the baseline gin resting in barrels that previously held Tasmanian Pinot Noir. That resting is what lends the gin its subtle copper colour too. With all the added complexity, the gin flavourful enough to sip on its own, much like a whisky. 

Supply of barrels have been running low as the wineries have not released more barrels in the last two years. So savour this particular gin when you can!
