You are looking for a savoury vermouth with depth. Imperial Measures Umami Dry Vermouth is as the name suggests, a dry vermouth with savoury notes that is made for the dirty martini. 

Widely known as the "fifth" sense of taste, umami translates directly to "deliciousness." And delicious this vermouth is. Not only that, Imperial Measures Distilling has replicated a vermouth that bypasses the need for the olive brine used in a dirty martini. But how? 

The deliciousness comes from a handpicked selection of botanicals. In this case, wormwood gives the vermouth its signature bitterness. As for the other ingredients? They read more like the stuff on a fine dining menu. Adelaide Hills porcini mushrooms, Australian wakame seaweed, local Riverland capers, Japanese white miso. And sambal!

Prior to infusion, all of these ingredients are fermented then individually vacumn sealed with spirit. Gentle heat in a water bath extracts the delicate notes of those ingredients otherwise lost in more traditional production methods.

The base wine is a biodynamic Watervale Riesling from the famed Churinga Vineyard. After spending two years in barrel, the wine contributes chalky tannin structure, acidity and complexity. All of which adds another layer to the umami-ness of this vermouth from Imperial Measures.
